Hello Gentle Readers
Lena got into a Baking mindset this morning and made some scrummy tartlets.
Here is the recipe.
Ingredients
1 sheet of premade shortcrust pastry
Frozen mixed berries
Low fat cream cheese
Sugar (optional)
Method
Roll out the pastry and cut it into 5cm circles (we used a drinking glass).
Place the circles into a muffin tray pushing down so they become little cups.
Place in a preheated oven (180) for about 10 minutes.
Take out of the oven and spoon some cream cheese into each tartlet case. Spoon in some of the mixed berries and sprinkle a little sugar on top.
Place back in the oven for a further 10 minutes.
Take out, allow to cool and serve. Yummy.

Hello Gentle Readers
I have not posted a recipe in ages but after yesterdays dinner, I just had to post.
Ingredients (serves 3)
2 bags of boil in the bag rice
2 Salmon fillets
Red Pepper
Cucumber
Spring Onion
Salt and Pepper
Oil and Balsamic vinegar.
Method
Boil the rice adding salt to the water and bake the oil drizzled and peppered salmon in an oven for 20 minutes at 180.
While it is cooking chop the spring onion, paprika and peeled cucumber and place in a bowl with a little salt.
Mix the oil and balsamic in a small dish and drizzle over the vegetables.
When the rice and salmon are cooked spoon the rice equally into bowls. Flake the salmon into small pieces and place onto the rice.
Add the salad around the edge of the dish and serve.
Delicious
