First up here is Lena's recipe for Syrniki.
Ingredients
500 g low fat biezpiens (cottage cheese)
5 table spoons plain flour
2 medium eggs
sugar (you can put in as much as you prefer)
Method
Mix the biezpiens, flour, eggs and sugar in a bowl until it has blended a bit like pancake batter.
Heat up 1-2 table spoons of oil in a hot pan and using a spoon place 5 or 6 dollops of the batter into the pan. Flatten them down a little bit so they are pancake shaped.
Cook for 2-3 minutes on each side (until brown).
Serve immediately with Jam, sweet or sour cream or anything else you prefer
