Mine is an omelette with 3 types of paprika. Hence the name of it. The Rasta omelette is Red, Gold and Green.
Ingredients
Red, Yellow and Green pepper
Red onion
Bacon
7 eggs
garlic
olive oil
salt.
Method
Chop the onion, peppers and bacon and place in a frying pan. Crush in 1 or 2 garlic cloves, drizzle with oil and gently fry.
Break the 7 eggs into a bowl, add a pinch of salt and whisk. Pour the egg over the vegetables and give a quick stir so that all the ingredients are covered with egg.
While the omelette is cooking you could quickly make a delicious fresh salad by cutting 2 tomatoes, half a cucumber, some onion and paprika into small piexes. Sprinkle on some salt and a dash of olive oil. Serve with the omelette.
