Lena's Chocolate Orange Pancakes
Hey Gentle reader. Time for one of my favourites. Lena makes fantastic pancakes. Today I asked what we could do to jazz them up and this is what she came up with.
They taste absolutely fantastic, an amazing Sunday breakfast treat.
Ingredients
6/7 tablespoons plain flour
5 tablespoons sugar
3 large eggs
100ml milk
100ml orange juice
zest of one orange
40g chocolate
Method
Blend the eggs for a few seconds, add the sugar and then blend again for a few seconds more.
Add the milk, orange juice and grate the zest of an orange into the mixture and blend again for about 30-40 seconds.
Finally add the flour for another 2 minutes until the paste is nice and thick.
Using a sharp knife, chop the chocolate into small irregular pieces and put it into the batter.
Heat 1-2 teaspoons of Extra Virgin Olive Oil in a pan and spoon the mixture into it so you are making 3 or 4 pancakes at a time. Repeat until they are all done.
You can serve them plain or with jam, honey, ice cream or maple syrup.
