Hey Gentle Readers. Its recipe time again
Here's my take on classic Chicken Risotto.
Ingredients (serves 4)
1 large chicken breast
2 cooked sausages
1 onion
half a red pepper
half a yellow pepper
2 cloves garlic
1 tin tomatoes
half a red chilli
100g frozen peas
half tin sweetcorn
extra virgin olive oil
2 chicken stock cubes
2 boil in the bag rice
1 chicken cup a soup.
Method
Brown chicken in olive oil and crush the garlic into the oil.
When browned cut the sausages into small pieces and add to the pan.
Place the onion, peppers, peas, sweetcorn, chilli and tomatoes into food processor and chop until you have a chunky paste. Make the chicken cup soup pour it into mixer and mix for a few seconds.
Pour the sauce over the chicken and sausage and simmer for 10 minutes.
While the sauce is simmering make the stock and cook the boil in the bag rice in the stock for 10 minutes.
Open the rice bags and pour the rice into the pan, stir, and keep simmering for another 10-15 minutes, stirring regularly.
