Neil's stick to your ribs pork stew
Hello Gentle Readers, I know its summer but I was in the mood for hearty, comfort food tonight so i bought potatoes, carrots and loads of other vegetables and made Lena my "Stick to your ribs" stew and now I am going to share it with you.
Ingredients
400g pork, boneless cubed
4 large potatoes
1 large carrot
2 medium onion
1 yellow pepper
1 red chilli (seeded)
3 beef stock cubes
1 tablespoon gravy powder
i pinch oregano
1 tablespoon Extra Virgin Olive Oil.
1 tablespoon HP Sauce (optional)
Method
Par-Boil the potatoes (do not salt)
Brown the pork in the oil and add the onion, pepper, chilli and carrots.
Make a pint of beef stock and pour over the meat.
Add the oregano and bring to the boil.
Add the gravy powder and stir through.
Turn the heat right down and let it slowly simmer.
When the gravy is thick enough add the potatoes stir and cover and cook on a low hear for around 30 minutes,
