I am a teacher of Geography, Global Perspectives and English. I am married to Lena who is my soulmate and best friend.We also have a little boy, Robert. How to make my special Pelmenies
Ingredients
Enough meat pelmenies for 2 people
2 packets of mushroom or cheese cup soup
6 good sized mushrooms
1 onion
1 large red pepper
2 cloves garlic
Low fat sour cream (krejums)
Cheese (grated)
Olive oil
Salt and black pepper
Method
1. chop the mushroms, onion, pepper and garlic into small pieces and gently fry them in olive oil in a large pan.
2. Boil the pelmeni in salted water for a few minutes. Drain and then add the pelmeni to the vegetables and continue frying until the dumplings are golden brown.
3. Boil a kettle amd put both cup soups into one cup. Make the soup as normal but add two teasponns of krejums to add creaminess and thickness.
4. Pour the veg and pelmenies into an ovenproof glass or ceramic dish and pour over the soupy sauce. Ensure all of the pelmenies are covered.
5. Place in a preheated oven (gas mark 7- 220 degrees for 10 minutes.
6. Remove dish from oven and sprinkle cheese over the top of the pelmenies and return to oven for another 5-7 minutes.
Once ready serve immediately with a fresh green salad and nice crusty bread.
