Hello again gentle reader, time for another recipe.
This time however, Lena is getting all the credit.
Ingredients
12 potatoes
1 onion
2 garlic cloves
4 table spoons plain flour
2 medium eggs
Salt
Olive oil.
These ingredients will make 3 large portions of pancakes
Method
1. Grate the onion into a bowl.
2. Peel and wash the potatoes before grating them into the onion.
3. Crush 2 cloves of garlic into the mix
4. Add the eggs, salt and flour to the mixture and stir until the paste is sticky throughout
5. Heat 1 teaspoon olive oil in a pan (medium heat)
6.Spoon 4 pancake shaped patties into the oil and flatten so they are about 5-10mm thick.
7. Cook for about 3-4 minutes on each side until golden brown. Check the inside is cooked with a knife.
8. Pancakes can be thicker but will take longer to cook.
As an optional extra you could add grated cheese, grated carrot or even cooked meat to the mixture.
Serve immediately with a dollop of sour cream.
