Neil's Cheesy Chicken n Bacon Spaghetti

Hello gentle  reader, its been a while since I put on a recipe, so here is tonights dinner. 
Especially for you.


Ingredients (Serves 4)

1 chicken breast (skinned)
1 pack of streaky bacon
2 cloves garlic
3 medium eggs
30g parmesan cheese
1 teaspoon soft white cheese
2 tbsp extra virgin olive oil
250g Spaghetti

Method

1. Boil the water and the pasta for approximately 10 minutes 
2. cut the chicken and bacon into small pieces and brown in the olive oil on a medium/high heat
3. Break the eggs into a bowl and add the parmesan and the soft cheese. Whisk until the mixture is smooth.
4. Crush the garlic into the chicken and bacon and fry for 1 more minute.
5. Drain the pasta, keeping 1/2 cup of starchy water for the egg mixture.
6. Pour the pasta into the pan and stir well. 
7. Pour the egg mixture over the pasta while the pasta is still hot, add the starchy water if too thick, turn off the heat*.
8. Stir the pasta to ensure sauce is covering all the pasta and put a lid on the pan.
9. Serve with salad and garlic bread.

*The pasta needs to be hot as this heat will cook the eggs. If you keep the heat on, the eggs will begin to scramble.

This recipe may sound like a bit like carbonara and you would be right. This is my own unique twist on a classic Italian dish.
