Neil's Mustard and Garlic Beef with Roasted Veg


Hey gentle reader, its recipe time again. Today its my own Roast Beef special that I made this evening.

Ingredients. (serves 3)

Approx 350g Beef joint
8 potatoes
6 mushrooms
100g frozen green peas
100g frozen green beans
Quarter bag of Frozen veg (Carrots/Broccoli/Cauliflower)
1 carrot
half a red pepper
Half an onion
3 garlic cloves
Extra virgin olive oil
Mustard

Optional Extra
Onion Gravy

Method

1. Preheat your oven to gas mark 8 (220 degrees Celsius)
2. In the meat cut a criss-cross of grooves and into the grooves place the sliced garlic. Spoon the mustard onto the beef and spread thinly.
3. Wrap the meat in foil and place at the centre of a roasting pan and place in the oven.
4. Wash and peel the potatoes and whole carrot and par boil for 20 minutes.
5. Place the frozen veg into warm water but do not heat the water.
6. Remove the beef from oven, remove foil (keep the beef juices if you can) and place it back in the oven for another 5 minutes.
7. Place the par boiled potatoes and carrots, the now unfrozen veg and the red pepper, mushroom and onion onto the roasting pan surrounding the beef and drizzle the olive oil and beef juices over the veg and carefully stir.
8. Place back into the oven for another 30-45 minutes.


On the left is my dinner with mushrooms and gravy, on the right is Lena's without mushrooms or gravy.
