Hey Gentle Readers
A bit of a strange concoction tonight but Lena really liked it, in fact we both had a second helping.
Ingredients
300g lean pork (cubed)
1 red pepper
1 red chilli
2 garlic cloves
2 carrots
2 small onions
100g frozen peas
1 teaspoon English Mustard
1 teaspoon adzika
Half teaspoon Curry Powder
250g Basmati Rice
2 teaspoons Extra Virgin olive oil
1 chicken stock cube
salt
Method
Sauce
Chop half the pepper, one onion, half a carrot, garlic cloves and half the chilli (with seeds) and place into a blender with one teaspoon of olive oil, mustard, frozen peas, adzika and one cup of chicken stock. Blend until biggest chunks are broken down.
Pork and stir fry
Cut the pork into small cubes and brown in one teaspoon of olive oil. Add the carrots, pepper, onion and rest of the chilli and stir-fry until pork is cooked.
Pour the sauce over the meat and veg and simmer on a low heat for 20-30 minutes.
Boil the rice for ten minutes and pour it into the sauce and stir.
